I know, I know, this is supposed to be for Christmas – but if you try this recipe, you will want them over and over again (and just for the records: you can blame me :-)) So here we go !
for the dough
- 500g flour
- 1 pck yeast
- 150ml milk
- 1 sip water
- 100g sugar
- 1 egg
- 1 egg yellow
- 2 pinches of salt
- mix everything with your hands for at least 10 minutes
- form a ball
- let it rest for 30 minutes
In the meanwhile, prepare the butterplate and have a drink 🙂
for the butter plate
- 180g soft butter
- 15g flour
- 100g sugar
- 15g cinnamon
- mix all ingredients and spread them on some cling wrap, should be about 15 * 20cm
- cover the buttermix with wrap as well and
- put it for 15 minutes into the freezer so it gets hard
for the filling
- 50g sugar
- 5g cinnamon
- a little bit lemon syrup or water
mix everything.
make cinnamon rolls
- take the dough out of the fridge
- roll it out, if necessary, take some additional flour if it sticks
- lay the butter plate on the rolled out dough
- spread the filling on it

- wrap the dough around the butter plate like an envelope
- fold it in thirds
- roll it out again
- fold again in thirds
- roll out again
- now roll up the dough

- cut the roll into 2-3 cm thick pieces
- lay them on a baking tray – watch out, they need some space as they will rise in the oven

- if you still have some filling left, you can spread it on top of the rolls
- bake the rolls for 15-20 minutes at 180° C
- take them out, let them cool down a bit – enjoy 😍!
