Ingredients

  • 1 big sweet potato (~300 g)
  • 8 big Medjoul dates
  • 100 ml water
  • 1 teaspoon cinnamon
  • 1/2 vanilla pod
  • 30 g almond flour
  • 30 g cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 table spoon coconut oil
  • Pinch of salt
  • 80 g (vegan) chocolate chips
  • some walnuts to decorate

Instructions

  1. Cut te sweet potato in big chunks, transfer them onto a baking tray and put that into the oven for 30 minutes at 180° C
  2. Give the dates, cinnamon, vanilla pod and the water into a pot and cook these under stirring until you get get a gooey paste. Take out the pod.
  3. Mix your all the other ingredients
  4. When the sweet potato is fork tender, smash it with a fork.
  5. Mix it together with date paste and give it into your bowl with the dry ingredients ad carefully mix that all together.
  6. Transfer into a form, decorate with some nuts, bake for 20 minutes at 180°C. Let it cool and set in the fridge (it will still be very moist).
