Ingredients
- 1 big sweet potato (~300 g)
- 8 big Medjoul dates
- 100 ml water
- 1 teaspoon cinnamon
- 1/2 vanilla pod
- 30 g almond flour
- 30 g cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 table spoon coconut oil
- Pinch of salt
- 80 g (vegan) chocolate chips
- some walnuts to decorate
Instructions
- Cut te sweet potato in big chunks, transfer them onto a baking tray and put that into the oven for 30 minutes at 180° C
- Give the dates, cinnamon, vanilla pod and the water into a pot and cook these under stirring until you get get a gooey paste. Take out the pod.
- Mix your all the other ingredients
- When the sweet potato is fork tender, smash it with a fork.
- Mix it together with date paste and give it into your bowl with the dry ingredients ad carefully mix that all together.
- Transfer into a form, decorate with some nuts, bake for 20 minutes at 180°C. Let it cool and set in the fridge (it will still be very moist).
