What you need:
For the Chicken
- 4 Chicken whole legs
- 500g Potatoes
- 1 Lemon
- 10 Garlic cloves
- 1 thumb-sized piece of ginger
- needles of 5 Rosemary twigs
- Olive Oil
- Salt & Pepper
- some walnuts to roast
For the Chutney:
- 500g plums
- 2 red Onions
- 1 sip of white Balsamico vinegar
- 200g brown sugar
- 1 thumb sized piece of ginger
- 1/2 teaspoon of Cinnamon
How to do it:
1. Cut garlic and lemons in slices
2. pluck the needles of the Rosemary
3. Cut the ginger very fine
4. Mix garlic, ginger, and rosemary with some olive oil and Salt & Pepper
5. Cut the potatoes in half, lay them together with the chicken on a baking tray or a big form
6. Brush chicken and with potatoes the mixture and lay lemon slices on the chicken
7. Bake at 180° C for 90 Minutes
- Cut plums in quarters and remove the seeds
- Peel and cut onions in fine cubes
- Heat some olive oil and sauté onions and garlic until translucent
- Add sugar and let it caramelize a bit (just 2 minutes)
- deglaze it with some vinegar
- Add plums and cinnamon
- watch out – you need to stir the chutney frequently
If you like the chutney with pieces of fruit, you can leave it like that. You can also strain or mesh it.
Fill it in little jars, tastes delicious to all kind of meat and is also a nice present 🙂
Right before serving, roast some walnuts and add them.
